Baked Double Decker Cheese Rings | 500th Post | Easy Starter Recipe | Step Wise

Hi all!
Can’t believe that I finally reached the milestone of 500th post. It has taken me five long years to reach here. Yeah, slow and steady wins the race Smile. I know, I could have been  faster than this but there were months when blogging took a back seat.
I wanted this post to be special, so I cooked and tried so many dishes keeping the 500th post in mind and it took me a month long to decide, which one would make it to the 500th mark. After baking these beauties, all my doubts vanished immediately, as I knew for sure that no one could deny a piece of it.
These double decker cheese rings have been adapted from a you tube video but while baking them I realised that there are loop holes in the recipe especially in terms of baking procedure, so worked on it and baked at higher temperature. Small sized things should be baked preferably at higher temperature to get perfect baking, also the video doesn't ask to grease the exterior of the  rings,  which can actually make them dry.
These are so easy to make and assemble that even children can join you in making them. These can be liked by people from all age groups and children would love them the most. My kid loved them to the core and ate to his heart’s content and still craved for more.
These make an excellent party pleaser for guests and even kids would love them for birthday parties or even as an after school/ after play snack. The filling can be so versatile and it’s completely up to one’s choice. It’s a good way of feeding veggies to the children. This is one preparation which is healthy as well as tasty.

Baked Double Decker Cheese Rings

Preparation Time:30mins | Baking Time:10mins/batch | Makes: 10pieces | Difficulty Level: Easy

 
Ingredients
(Recipe adapted from you tube video by Ruchi Bharani) 
20 Bread slices (I used whole wheat bread)
For stuffing
3tbsp each of red, green and yellow bell pepper, finely chopped
100gms, cottage cheese crumbled
2 cheese slices
1/2 -1tsp chilli flakes
1/2tsp basil, hand crushed
1/2tsp mix seasoning (I used Domino’s seasoning mix)
salt to taste
1tsp tomato paste
For butter spread
50gms salted butter
50gms, cheese spread (I used black pepper flavour)
2garlic cloves, grated
also, oil/milk/butter for brushing

Mix together the ingredients for the butter spread. Mix all the ingredients under filling too. Keep the butter and filling ready.
Take two round cutters, one bigger in size and the other two sizes smaller than the first one. One could use bowls with sharp edges too.

Using the bigger size cutter, cut all the bread slices into discs.

Take half the cut discs and using the smaller cutter, cut rings.

On the bread discs, apply a generous layer of the butter spread.

Put a bread ring over the disc and press to seal all the edges.Take 1tablespoon of the filling and fill it neatly in the centre of the ring. Repeat the process for all the discs and rings.

Preheat oven at 200C. Apply oil lightly using a brush on the edges of the ring. This will prevent drying of the bread.
Bake in the oven for 8-10mins or more, till the bread gets a light golden colour. Serve hot.

Lovely !!! If serving for a party - can I make it few hours in advance and keep in oven when ready to serve .. Will the bread get soggy ??
