Hi all!!

Today I’m sharing one multipurpose sauce which is so easy to make. It is uncomplicated and yet so yielding. The sauce is so versatile that it can be used as a spread, dipping sauce, or pizza/pasta sauce. The kid liked it so much that he kept licking it out of the bowl.

As the title says it has three main ingredients; the tomatoes, red bell pepper and basil. I’ve used both the fresh and dry basil in this recipe but one is free to use what’s easily available with them.

The sauce mixed with extra virgin olive oil makes a dipping sauce which has a striking taste, making it desirable and exquisite. I sent this as a dipping sauce with a freshly made batch of Bundt garlic Parmesan Pull apart bread which the hubby had demanded ages back for his office colleagues and it was finally made now. I was delighted to hear that the bread was liked by them..

Red Bell Pepper-Tomato-Basil Sauce

Preparation Time:5mins | Cooking Time: 10mins | Makes:1-1/2cups | Difficulty Level:Easy | Category: Sauce

 

Ingredients

2tsp olive oil

2-3 cloves of garlic, grated

2tomatoes, chopped

1red bell pepper, chopped

1tsp red chilli flakes

1/2tsp oregano

1/2tsp basil

1/4cup basil leaves, chopped

1/2cup water

salt to taste

Extra Virgin Olive Oil to drizzle

Method

In a non stick pan warm the olive oil and add grated garlic, sauté for a few seconds, ensuring it does not brown.

Add chopped bell pepper and sauté on high flame for a minute. Add the chopped tomatoes and mix.

Add salt to taste. Once the tomatoes are half cooked, add the chilli flakes, dry oregano, basil. Mix thoroughly.

Add the water and bring to a boil. Add basil leaves, mix, cover with a lid, simmer and cook till done.

Cool the mix and grind to a paste, remove in a container, the sauce is ready. The sauce can be used as a spread or to make pizza/pasta.

To make the dipping sauce take a small portion of the sauce and drizzle EVOO over it.
