APPLE JAM

After my first three spicy posts I thought let me add some sweetness to the blog. My last post was my younger ones favorite , this post is my elder ones favorite who has a sweet tooth. He can finish a bottle of it in no time and sometimes I have to hide it fearing he would upset his stomach....Nevertheless ,inspite of all the precautions I take ..the kids are very smart and would locate and finish it.
My kids have an obsession for home made things . Anything new I try they are very encouraging and will give their thumbs up..and that motivates me to experiment more. This Jam is also one of the things I tried making for them , simply for a reason that it's much healthier when made at home and a good way to use fruits .

Ingredients :

4 Apples - Cleaned, peeled and cut into small pieces

1 cup water

1/4 tsp citric acid

3 small bowls sugar

KMS-1/2 tsp

a pinch of red food colour

Method:

In a pressure cooker steam the chopped apples with a cup of water and citric acid till the apples are tender. Mash the apples . In a thick bottom pan take the apple pulp(it was 4 small bowls), add the sugar (*the proportion is for 4 cups pulp, add 3 cups sugar). Cook till it becomes thick and it forms a drop. Put a drop in a separate bowl of water , if it does not disintegrate the Jam is done. Add KMS -1/4 tsp (this helps to preserve the Jam) and red colour 2-3 drops. A very glowing Apple Jam's ready.

Nice post - what is KMS and where does one get it in Delhi/NCR please?

Thanks Sid. KMS is Potassium meta bisulphate. It's a preservative and is readily available with chemists.
